What is Brine &Ember?

Brine & Ember is what happens when you take a local Hawaiian Staple (Huli Chicken) and combine it with the flavors of OoohMami. It's a partnership with my friend Anthony and we've been going strong for about a year now. 

What makes us Different?

We brine our Chicken overnight. This way it locks in all the flavor and moisture. We also have a dry rub that was inspired by the OG beef jerky flavor. 

Why?

Huli Chicken is a core memory of a lot of people who grew up here. We'd get Huli chicken fundraiser tickets and pick em up on a Saturday morning straight into a plastic bag. then we grew up. All of the Huli chicken places that were in town suddenly vanished. 

Soon, it was a trek to the other side of the island if you wanted to experience a bit of nostalgia. Not anymore. This is why we started this business. We wanted to have a place centrally located so that people in town can grab some. We wanted to build a community and to build memories for people and for those peoples kids. 

Where is Brine & Ember?

We're at two locations. Wednesday and Friday at Hapa Market in Palolo and Saturday thru Monday at Howzit brewing. 

Hapa Market:12:30-Sell Out

Howzit: Sat:12-sell out, Sun: 4- Sell Out, Monday: 5- Sell out

What kind of food do y'all sell?

At Hapa market it's our brined and slow rotisserie chicken. At Howzit Brewing it's a little more experimental. Saturdays is usually our Huli Chicken day, Sunday is quesadillas (using that same Huli chicken) and bar bites, and Mondays is industry night where we sell smash burger.
